Mirin and Soy Class
This is the class we recommend for anyone starting out with Japanese cooking.
Japanese choumiryou (seasoning and condiments) are very simple, being made from only a few ingredients such as mirin, soy sauce, sake, miso and vinegar.
By learning to combine these ingredients, you will acquire the basic skills required to enable you to make a wide variety of Japanese dishes by yourself.
We will also teach you how to create traditional stock from scratch as well as from ready-made instant stock.
*Vegan/vegetarian, and gluten free options are available.

Sushi Class
In our sushi classes, you will learn every step, so you can prepare restaurant quality sushi in your own home. From washing the rice, cooking it and mixing with vinegar, to filling preparation and finally rolling the sushi, we will carefully guide you, while also providing small but important tips to maximise your new found knowledge.
Using ingredients such as teriyaki chicken, sweetened egg omelette, prawns, tuna, avocado, cucumber and Japanese pickled radish, you will learn how to prepare them to make the perfect sushi rolls.

Vegan and Vegetarian Dishes
Japanese vegan/vegetarian cooking has a long history. It is based on balance, harmony and simplicity. It involves carefully selecting and combining seasonal ingredients to create the perfect blend of tastes, colours and cooking methods.
In this class you will learn how to cook tasty, healthy and popular Japanese vegetable dishes.
The vegan/vegetarian Mirin and Soy class (shown above and also in our Group Classes) is recommended for those new to Japanese cooking.

Izakaya Style Class
An Izakaya is a type of informal Japanese Bar that commonly serves alcohol and tapas-style dishes.
We will teach you some of the more popular the popular Izakaya dishes, such as:
- Beef Tataki
- Egg Plant Dengaku
- Quick Pickles Vegetable (Tukemono)
- Spinach Sesame Dressing
- Meatball
- Japanese Salad
- Tofu Dish
- Miso Soap
- Yakitori
- Fish dish (grilled, miso marinated or ankake gravy)
- Tamagoyaki

Fish Filleting Class
Our goal is to help you learn how to correctly fillet and prepare whole fish, using small to medium sized fish (Small Fish - Herring, White Trevally( Skippy fish) etc, Medium Fish - Cod, Medium Snapper etc, it may change by a season)
We can also supply larger fish such as salmon, king fish or snapper if desired.
You will be taught how to fillet the fish using the ‘sanmai oroshi’ technique, where the fish is divided into three parts.
This cutting method is simple and preserves the flavour and texture of the fish.
You’ll cut 8-9 fishes in the class, and you can enjoy the fresh fish as Sashimi.
We will discuss the menu after the booking is confirmed.
This class cost is $260 (one by one) / $460 (2 people) include all fishes.
