Teriyaki Chicken

Mirin and Soy Class

This is the class we recommend when beginning Japanese cooking.
Japanese choumiryou, seasoning and condiments, are very simple. We only use mirin, soy sauce, sake, miso and vinegar. By combining these few flavours, we can create a wide variety of dishes.
In this class you will learn how to use mirin and soy sauce by cooking many dishes, covering the basic skills and flavour of Japanese cuisines. You will also learn to create traditional stock from scratch and from ready made instant stock.
We will ensure that you understand how to use mirin and soy sauce to adjust different dishes the way you want without a recipe. You will be able to create your own Japanese flavoured food by yourself.

Sushi Class

The sushi now loved by many people all over the world is created from the harmonious combination of the carefully cooked rice and fillings.
Washing the rice, cooking the rice, mixing the vinegar. Preparing the filling, rolling the sushi. For every step we will carefully teach you with details, providing small but important tips as we go.
One person will be using 5 cups of rice, will cook teriyaki chicken, sweetened egg omelette, prawns, tuna, learn how to cut them as well as avocados, cucumbers and Japanese pickled radish (ingredients subject to vary). You will finish the class with 80 ~ 90 pieces of sushi, as well as some inside out rolls and hand rolls.
We will keep you busy cooking all the ingredients and rolling the sushi. Making this amount of sushi will give you all the experience and confidence you need to roll sushi at home yourself.

Popular Three

A class specific to the 3 most popular dishes; karaage, katsu and gyoza
Its great have the skills to deep fry something when cooking as fried dishes are very popular to both adults and children. It is very important to understand some rules and tips when learning to deep fry so in this class you will be learning the correct and healthy way of deep frying while keeping it tasty.
Karaage is a dish where you marinate the ingredients, coat them with flour or starch and then deep fried. Common ingredients are chicken, fish, squid, or vegetables. We will use chicken and create three different flavours at the marinating step to taste and compare. A person will be cooking 20 ~ 25 pieces of karaage.
Katsu is a crumbed deep fry dish and commonly uses pork, chicken or beef, sometimes seafoods and vegetables too. We will use chicken and fish to learn deep frying techniques for different ingredients.
Gyoza is a Japanese pork and vegetable dumpling wrapped in a thin dough. It is very tasty and easy to make once you know how to. To make gyoza tasty and juicy, the pan frying step is very important so you will be taught in detail how to make the filling, to wrap and to pan fry.
We’ll discuss the menu before the class starts if there are special request.

Shojin Ryori

Vegan and Vegetarian

Japanese vegan/vegetarian cooking has a long history, commonly recognised as Shoujin Ryori (its name coming from the Buddhist idea and words).
It is based on balance, harmony and simplicity. It involves carefully selecting and combining seasonal ingredients to create the perfect blend of tastes, colours and cooking methods.
In this class you will learn how to cook tasty, healthy and popular Japanese vegetable dishes.It is so simple and so tasty, it is also suitable as every day dishes.
The vegan/vegetarian Mirin and Soy class (shown above and also in group classes) is recommended if beginning Japanese cooking.

Izakaya is a type of informal Japanese Bar that commonly serves alcohol and Tapas style small dishes. It is often to share among friends and families when eating out.
We will learn the popular and typical Izakaya menus.

Fish Fillet Class

Fish Fillet Class

Our goal is to help you learn how to fillet correctly and prepare the whole fish. You will be taught how to fillet the fish in sanmai oroshi, three fillet pieces, using small to medium sized fish (we can also supply larger fishes such as salmon, king fish or snapper if desired).
Additional cost will apply depending on the fish and situation.

Recommended to bring your own knives.
It is ESSENTIAL to have intermediate knife skills.
